I love dukkha & throw it on loads of savoury things (baked vege, pasta, soups, salads, or just some cheese & bikkies). Imagine my excitement when looking for single serve recipes – I found this one including dukkha + simple + delish! It’s pretty easy – this may become a lunchbox special.
Dukkha Chicken Vege Bake

Serves: 1
Good for: Gluten free & diabetes
Ingredients:
🗸 ½ yellow or red capsicum, thickly sliced
🗸 ½ red onion, cut into wedges
🗸 5 baby carrots, peeled
NB: if large cut in half lengthwise
🗸 125g can chickpeas, rinsed & drained
🗸 100g chicken breast
🗸 1 tbsp. extra virgin olive oil
🗸 1 tbsp. dukkha
🗸 1 cup mixed baby salad leaves
🗸 25g feta, crumbled – to garnish
Directions:
🍴 Preheat oven to 180C & line a baking tray with paper.
🍴 Add capsicum, onion, carrots & chickpeas to baking tray.
🍴 Top with chicken breast, drizzle with olive oil & sprinkle with dukkha.
🍴 Bake for 20-25 minutes or until vegetables are tender & chicken is cooked through. Slice chicken.
🍴 Add vegetables & leafy greens to plate, adding sliced chicken & garnishing with crumbled feta.

Hi Becky. Great Q & one I asked at College of a few lecturers. If you claim as your own its needs to be changed by 30% or of course your own creation. Otherwise you need to nominate where it is from (give them credit). Hope you are doing well & that answers your question. 🙂
