I was lucky enough to visit a friend recently who had heaps of limes ready to pick. So, I’ve been trying out some lime recipes.
Rub for Roast Chicken
⭐️ 3 tbspn extra virgin olive oil
⭐️ 8 scallions, chopped
⭐️ ¼ cup fresh ginger, peeled & chopped
⭐️ 4 garlic cloves
⭐️ 1 tsp. lime zest
⭐️ 1 tbspn coarse salt
⭐️ Pinch black pepper
What to do:
⭐️ Blitz all ingredients in a food processor.
⭐️ Rub half the paste under the skin & remaining over the chicken.
⭐️ Bake as usual.
Delicious with roast vege but seriously what isn’t?
