Winter means citrus

Bottom line – citrus is always good to get in your diet because it is loaded with Vitamin C. Need more reasons:

🍊Boosts the immune system

🍋 Boosts antioxidants

🍊 Improves iron absorption

🍋 Reduces blood pressure

🍊 Reduces the risk of both heart disease & dementia

🍋 Plus of course many other benefits

👉 Remember Vitamin C is a water-soluble vitamin, so you need to maintain your levels each day either via diet or supplementation.

I was lucky enough to visit a friend recently who had heaps of limes ready to pick.  So, I’ve been trying out some lime recipes.

Rub for Roast Chicken

⭐️ 3 tbspn extra virgin olive oil

⭐️ 8 scallions, chopped

⭐️ ¼ cup fresh ginger, peeled & chopped

⭐️ 4 garlic cloves

⭐️ 1 tsp. lime zest

⭐️ 1 tbspn coarse salt

⭐️ Pinch black pepper

What to do:

⭐️ Blitz all ingredients in a food processor.

⭐️ Rub half the paste under the skin & remaining over the chicken.

⭐️ Bake as usual.

Delicious with roast vege but seriously what isn’t?
